we developed the

as a heat-stable

TRAVELER´S CHOCOLATE &

TRAVELER´S SNACK.


The pioneering 1850 recipe by

THERESIA HAUER® for the nougat-marzipan praline—known as the LIPIZZANER® PRALINE BALLS when enrobed in white chocolate—was expanded into a travel snack.


With 20g net weight, it is larger than other Mozart pralines; in terms of ingredients, it is more fortifying, gentler on the stomach, healthier, and more sustainable.

1766 SWISS CONCERT TOUR.

The story behind

MOZART CHÜGELI®,

THERESIA HAUER® PRALINE BALLS &

ORIGINAL LIPIZZANER® PRALINE BALLS

(Theresia Hauer® Kugeln with white chocolate coating)

is fascinating:


The summer of 1850 was relatively hot. Until then, praline production involved rolling nuts or fruit in nougat; these simple confections would melt when exposed to heat.


This prompted Theresia Hauer to place the nougat at the center and encase it in marzipan, creating a heat-resistant praline. She designed the outer shell with two layers: one of dark chocolate and one of milk chocolate.


As a pioneer of white chocolate, she also created a variant—much like her cakes (LIPIZZANER®CAKE)—featuring a white chocolate coating (LIPIZZANER® PRALINE BALL), which offered even greater heat stability, withstanding temperatures 8°C higher.


Thus, the pioneer Theresia Hauer developed the recipe for the nougat-marzipan-chocolate praline. With its white chocolate coating, the version quickly acquired the name that would later become our international brand product: LIPIZZANER® PRALINE BALL.
